Procedure
Combine Item 5 – 7 (main batch) and start heating to 80 °C to 85 °C in a water bath. 3 % to 5 % of water was compensated up front for water loss during the heating process.
At 55 °C to 60 °C, add Item 1 into main batch while using medium to high propeller stirring.
At 70 °C to 75 °C, add Items 2 – 4 into main batch while using medium to high propeller stirring.
At 75 °C to 80 °C, continue mixing at medium speed for 10 min to 15 min. Ensure all items are melted and uniformly dispersed.
At 75 °C to 80 °C, homogenize at 2500 rpm for 2 min to 3 min.
Transfer to slow to medium anchor mixing.
At 50 °C to 55 °C, add Items 8 – 10, one at a time to the main batch.
Stop mixing at 40 °C to 45 °C. Allow to cool to room temperature.
Once fully cooled, homogenize at 2000 rpm for 2 min to 3 min to whip in air and create fluffy texture.
